Lime Chicken with Stir-fry Vegetables

 

Ingredients for the lime chicken breast:

  • 4 chicken breasts (boneless)
  • 2 tablespoon olive oil
  • Juice of two limes
  • 4 cloves of garlic, pressed
  • salt and freshly
  • ground black pepper

     

Ingredients for the stir-fry:

  • 4 c fresh broccoli
  • 4 peppers (various colours) 
  • 2 large courgettes
  • 2 oz chopped walnuts olive
  • oil for frying
  • 1/2 tsp chili oil or small mount chilli (if desired)
  • shoyu sauce
  • Garlic to taste

Mix all ingredients for the lime marinade together in a medium bowl.

Lay boneless chicken breasts between 2 sheet wax paper. Using a wooden rolling pin, pound each chicken breast gently to tenderize meat. Place chicken breasts in lime marinade for a minimum of two hours - keep covered and chilled. (If you need to prepare dish in advance, you can marinate breasts overnight.) Cook chicken breast under the grill, 5 minutes each side or until cooked through.  

In a wok, add olive oil and chili oil. When oil is hot, lower heat and toss in chopped red onion, garlic and chopped fresh broccoli. Stir occasionally, cooking for five more minutes. Add courgettes, walnuts and peppers and cook a few mins longer keeping vegetables 'al dente'. Season with shoyu sauce

 Serve lime marinated chicken breasts on top of the stir-fry vegetables as a light lunch. If needing something more substantial serve with brown basmati rice, quinoa or wholemeal tortilla / pitta bread.
